Namkeen Gosht (Peshawari Salted Meat)

Ingredients
- 1 kg Mutton or Beef (Mixed cuts with some fat for authentic flavor)
- 2 tbsp Ginger Garlic Paste (Freshly ground preferred)
- 1.5 tsp Salt (Adjust to taste)
- 2 cup Water (Use less if cooking in a pot without pressure)
- 6 Green Chilies (Whole or slit)
- 1 tsp Black Pepper (Freshly crushed)
- 2 tbsp Cooking Oil or Ghee (Optional; only if the meat is very lean)
- 1 unit Ginger (2-inch piece, julienned for garnish)

Clean and wash the 1kg of meat thoroughly. If using mutton, ensure there are some pieces of fat included as this provides the traditional flavor.

In a pressure cooker, combine the meat, 2 tablespoons of ginger-garlic paste, 1.5 teaspoons of salt, and 2 cups of water.

Close the pressure cooker lid. Cook on high heat until the first whistle, then reduce the heat to medium-low. Cook for 20-25 minutes for mutton, or 35-40 minutes for beef, until the meat is very tender and nearly falling off the bone.

Allow the steam to release naturally before opening the lid. Check the meat for tenderness.

Turn the heat to high to evaporate any remaining excess water. If the meat is lean, add 2 tablespoons of oil or ghee at this stage.

Add 6 whole green chilies and 1 teaspoon of crushed black pepper. Sauté (bhunno) the meat for 5-10 minutes, stirring frequently, until the water has dried up and the meat begins to fry in its own fat.

Continue sautéing until the meat takes on a light golden-brown color and the fat separates completely from the masala.

Garnish with julienned ginger and serve hot with naan, tandoori roti, or as a standalone snack.
Notes
For a more traditional 'Peshawari' style, avoid adding any onions or tomatoes. If you prefer the meat less 'mashed,' reduce the pressure cooking time by 5 minutes and finish the cooking process on an open flame. The 'whistle' count depends on your specific pressure cooker, but generally, 4-6 whistles on medium heat are sufficient for mutton.
