Ingredients

  • 0.25 cup Vanilla yogurt (YoPro used in original recipe)
  • 1.5 tbsp Maple syrup (Sugar-free; 1-2 tbs)
  • 1 cup Unsweetened vanilla almond milk (or any milk of choice)
  • 1 tbsp Chia seeds
  • 80 g Oats (Red Tractor protein oats used in original recipe)
  • 25 g Chocolate protein powder (Chocolate caramel bar flavor recommended; 20-30g)
  • 20 g Maple syrup (for caramel layer)
  • 20 ml Biscoff spread (melted; or almond butter)
  • 25 g Milk chocolate (Lindt no sugar milk chocolate used in original recipe)
  • 35 g Yogurt (Cocobella coconut yogurt used in original recipe)
  • 0.5 tbsp Milk (for ganache)

Steps

    In a large bowl, combine the yogurt, 1-2 tablespoons of maple syrup, almond milk, chia seeds, oats, and chocolate protein powder.

    Mix the ingredients thoroughly and place the bowl in the fridge for 10 minutes to allow the mixture to thicken.

    Once thickened, give the oats another mix and divide the mixture evenly between 2 small bowls or jars.

    To make the caramel, melt the Biscoff spread (or almond butter) in the microwave for 30 seconds.

    Let the melted spread cool for one minute, then stir in 20g of maple syrup until combined.

    Drizzle the finished caramel sauce over the top of the oats in each bowl.

    To make the ganache, melt the milk chocolate in the microwave. Once melted, add 1/2 tablespoon of milk and mix.

    Stir the 35g of yogurt into the chocolate mixture until a smooth ganache forms. (Note: If using coconut yogurt, you can microwave the chocolate and yogurt together for 30 seconds, let stand for 15 seconds, then stir until thick).

    Top the middle of the oats with the ganache, spreading it over the caramel layer.

    Place the jars in the fridge overnight to set completely.

Notes

For a vegan and dairy-free option, ensure you use plant-based yogurt and vegan chocolate. The author recommends using a chocolate caramel flavored protein powder for the best flavor profile.
