Wonton Soup
A comforting homemade wonton soup featuring juicy pork dumplings in a simple, savory chicken broth. This version cooks the wontons separately to ensure a clear, clean soup base.

Ingredients
- 250 g ground pork
- 2 tbsp carrot (minced)
- 2 tbsp spring onions (chopped)
- 1 tsp garlic (minced)
- 1 tsp ginger (minced)
- 1 tbsp soy sauce (for the filling)
- 1 tbsp oyster sauce
- wonton wrappers
- 1.5 L water (for the broth)
- 1 chicken cube (bouillon cube)
- 0.5 tbsp soy sauce (for the broth)
- green onions (chopped, for broth and garnish)
- chili garlic oil (for serving)

In a mixing bowl, combine the ground pork, minced carrot, chopped spring onions, minced garlic, minced ginger, 1 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Mix thoroughly until well combined.

To assemble the wontons, place a wonton wrapper over your thumb and index finger. Add approximately 1 1/2 tablespoons of the pork filling into the center.

Push the filling down slightly and pinch the edges of the wrapper together to seal the wonton. Repeat until all filling is used.

Bring a pot of water to a boil. Add the wontons and cook for about 5 minutes, or until they float to the surface.

Strain the cooked wontons and set them aside. Cooking them separately from the broth prevents excess flour from the wrappers from making the soup cloudy.

In a separate pot, prepare the broth by combining 1.5 liters of water, the chicken cube, 1/2 tablespoon of soy sauce, and some chopped green onions.

Bring the broth to a boil, then add the cooked wontons back into the pot.

Garnish with additional chopped green onions and serve hot with chili garlic oil on the side.
Notes
Cooking the wontons in a separate pot of water before adding them to the broth is a professional tip to keep the soup clear and prevent it from becoming thick or gummy from the wrapper starch.
