Ingredients
- 1 cup sugar
- 1 cup water
- 1.5 cup full-fat milk powder
- salt (tiny pinch (optional))
Steps
- 1
Add sugar and water to a saucepan.
- 2
Bring the mixture to a rolling boil and boil for exactly 5 minutes on medium heat. Do not let the sugar caramelize.
- 3
Remove the saucepan from the heat.
- 4
Let the syrup rest and cool for 5–7 minutes. It should still be hot to the touch, not cold.
- 5
Transfer the warm syrup to a blender.
- 6
Add 1.5 cups (150 g) of milk powder and a tiny pinch of salt if using.
- 7
Blend for 30–45 seconds until the mixture is completely smooth. Note that it will look slightly thin while warm, which is normal.
- 8
Pour the mixture into a container.
- 9
Refrigerate for a minimum of 3–4 hours to allow it to thicken to a classic condensed milk consistency.
Notes
The final texture after chilling should be thick, glossy, and smooth, creating a slow ribbon when poured. Store refrigerated for up to 1 week.
