Ingredients

  • 1.5 cup minute rice
  • 2 boneless, skinless chicken breasts (Cubed; about 1 pound total)
  • 1 red bell pepper (Diced)
  • 0.5 red onion (Diced)
  • 20 oz pineapple tidbits with juice (One can, including the juice)
  • 0.75 cup chicken broth
  • 0.5 cup coconut aminos or soy sauce (Use coconut aminos or soy sauce)
  • 0.25 cup brown sugar
  • 3.5 clove garlic (Minced; use 3 to 4 cloves)
  • fresh ginger (Optional; grate some into the sauce)
  • green onions (Optional; freshly cut, for sprinkling on top)

Steps

    Preheat the oven to 425°F (220°C). Set out a large baking dish that can hold all of the ingredients in an even layer.

    Add 1½ cups of minute rice to the baking dish and spread it across the bottom.

    Add the cubed chicken breasts, diced red bell pepper, and diced red onion to the dish.

    Add the entire 20-ounce can of pineapple tidbits along with its juice. Mix the rice, chicken, vegetables, and pineapple together until evenly distributed.

    In a separate bowl or measuring cup, combine the chicken broth, coconut aminos or soy sauce, brown sugar, and minced garlic. If using fresh ginger, grate it into the mixture.

    Whisk the sauce until the brown sugar is incorporated and the mixture is well combined.

    Pour the sauce evenly over the chicken-and-rice mixture in the baking dish, making sure the rice is moistened throughout.

    Cover the baking dish tightly with aluminum foil. Bake at 425°F (220°C) for about 50 minutes, until the chicken is cooked through and the rice is tender.

    Carefully remove the hot baking dish from the oven and take off the foil. Check the center for excess liquid. If it still looks overly wet, cover the dish again and return it to the oven until the excess liquid has been absorbed.

    Once the rice has absorbed the liquid and the dish is cooked through, sprinkle freshly cut green onions over the top if desired. Serve hot.

Notes

Take care when removing the foil because escaping steam will be very hot. The creator describes this as a simple, inexpensive one-dish family meal.
