Ingredients

  • 16 oz 2% cottage cheese (blended; Daisy brand recommended)
  • 1 cup boneless skinless chicken breast (shredded)
  • 1 can Del Monte street corn (drained)
  • 0.25 cup cilantro (chopped)
  • 1 jalapeno (chopped)
  • 2 tbsp crema
  • 3 tbsp Chipotle Tabasco
  • 2 tbsp Tajin
  • 0.33 cup queso Fresco cheese
  • 1 lime juice (juice of 1 lime)

Steps

    Place the 16oz tub of 2% cottage cheese into a blender and process until completely smooth.

    Transfer the blended cottage cheese into a large mixing bowl.

    Add 1 cup of shredded chicken breast, 1/4 cup chopped cilantro, and 1 chopped jalapeno to the bowl.

    Add the remaining ingredients: 1 drained can of street corn, 2 tbsp crema, 3 tbsp Chipotle Tabasco, 2 tbsp Tajin, 1/3 cup queso fresco, and the juice of 1 lime.

    Mix all ingredients together super well until thoroughly combined.

    Place the dip in the fridge for at least 2 hours before serving to allow the flavors to marinate.
