Ingredients

  • 1 lb Pasta (cooked in salted water; reserve some pasta water)
  • 500 g Roasted goat meat (Asun) (pre-cooked and salted; chopped into bite-sized pieces)
  • 2 tbsp Vegetable oil (for frying)
  • 1 Onion (sliced)
  • 1 cup Bell pepper, habanero, and onion mix (coarsely blended or finely chopped)
  • 1 tsp Paprika
  • 1 tsp Bouillon powder
  • 2 tbsp Hoisin sauce
  • 1 tbsp Oyster sauce
  • 1 tbsp Dark soy sauce
  • Salt (to taste; use sparingly as pasta and meat are already salted)

Steps

  1. 1

Cook your pasta in salted water until al dente. Drain and set aside, reserving a small amount of pasta water if desired.

  2. 2

Heat vegetable oil in a large pan or wok over medium-high heat. Add the sliced onions and sauté for about 2 to 3 minutes until the juices and flavor are released and they develop a sweet, slightly browned flavor.

  3. 3

Introduce the bell pepper, habanero, and onion mix to the pan. Continue to fry until the juices are released and the flavors merge.

  4. 4

Add the paprika and bouillon powder to the vegetable mix. Taste before adding any additional salt, as the pasta and the roasted goat meat are already salted.

  5. 5

Add the cooked pasta and the roasted goat meat (asun) to the pan.

  6. 6

Pour in the hoisin sauce, oyster sauce, and dark soy sauce. These provide the umami flavor that pairs with the goat meat.

  7. 7

Increase the heat to high and stir-fry everything together, ensuring the pasta and meat are thoroughly coated in the sauce and the dish is heated through.

Notes

Be very careful with salt in this recipe. The goat meat (asun) is typically salted during its roasting process, and the pasta is boiled in salt water. The addition of soy, oyster, and hoisin sauces also adds significant sodium.
