Creamy Tomato Meatball Pasta

Ingredients
- 400 g 5% lean beef mince (for meatballs)
- 1 onion (for meatballs)
- 2 garlic cloves (minced, for meatballs)
- fresh parsley (for meatballs)
- 1 egg (for meatballs)
- 1 tsp paprika (for meatballs)
- 1 tsp Italian seasoning (for meatballs)
- 1 tsp onion granules (for meatballs)
- 1 tsp garlic granules (for meatballs)
- 1 tsp black pepper (for meatballs)
- 1 tsp salt (for meatballs)
- 150 g dried pasta
- 1 red onion (for sauce)
- 2 tsp garlic paste
- 65 g tomato puree
- 200 ml vegetable stock
- 90 ml single cream
- fresh parsley (for sauce/garnish)
- 1 tsp salt (for sauce)
- 1 tsp black pepper (for sauce)
- 1 tsp oregano (for sauce)
- 1 tsp paprika (for sauce)
- 1 tsp onion granules (for sauce)
- 1 tsp garlic granules (for sauce)

Add your ingredients for the meatballs (beef mince, onion, minced garlic, fresh parsley, egg, and the 1 tsp each of paprika, Italian seasoning, onion granules, garlic granules, black pepper, and salt) to a bowl.

Combine the ingredients thoroughly and place the mixture into the fridge for one hour to firm up.

Roll the mixture into meatballs. Add your meatballs to a frying pan and brown for a few minutes on each side until golden, then remove and set aside.

In the same pan, add your chopped red onion and cook until softened.

Add your garlic paste and tomato puree to the pan and cook for 1-2 minutes.

Pour in the vegetable stock and single cream, then bring the mixture to a simmer.

At this point, put your dried pasta onto boil in a separate pot of salted water as per the package instructions.

Whilst the pasta is cooking, add your meatballs back to the sauce pan and simmer to finish cooking through.

Once the pasta is ready, drain it and add it to the pan with the sauce and meatballs. Toss to combine and serve.
Notes
You can air fry your meatballs at 180°C for 18 minutes if you prefer instead of pan-frying.
