Homemade Mozzarella Cheese
A fresh and creamy homemade mozzarella cheese made with just three basic ingredients. It is surprisingly easy to prepare and has a perfectly stretchy texture.

Ingredients
- 3 L Whole milk (Preferably high-quality whole milk)
- 0.5 cup White vinegar (Can vary between 1/3 and 1/2 cup)
- Salt (To taste, to be added at the end of the process)
- Ice water (For the final thermal shock)

Heat the whole milk in a large pot. Heat until it is warm to the touch but does not burn your finger (approximately 45°C).

Turn off the heat immediately.

Add the white vinegar to the hot milk and let it rest for 15 minutes so the milk curdles completely.

Place a strainer over a deep bowl, optionally covered with a clean cloth, and pour the mixture to separate the curds from the whey.

Squeeze the curd very well to remove excess liquid.

Place the cheese mass in a microwave-safe container and season with a little salt to taste.

Microwave for 30 seconds.

Remove and knead the cheese with your hands. Repeat the process of heating for 30 seconds and kneading 3 to 4 times, until the texture is smooth and the cheese is very stretchy.

Shape the cheese into a ball.

Submerge the cheese ball in a bowl of ice water for 15 minutes to let it firm up.
Notes
It is very important not to let the milk boil; it should only be warm. If you do not have a microwave, you can heat the cheese by submerging it in hot whey (without boiling) to achieve the elasticity needed for kneading.
