Ingredients

  • 2 lb pork ribs (Spare ribs; the indicated weight corresponds to the purchase with the bones.)
  • salt (To taste; use to season the ribs and adjust at the end.)
  • black pepper (To taste.)
  • 2 garlic cloves (Whole or lightly crushed.)
  • 2 bay leaves (Remove before serving.)
  • water (Enough to cover the meat; it will evaporate during cooking.)
  • 1 small white onion (Cut into strips or pieces.)
  • 2 poblano peppers (Cut into strips; remove the seeds for a milder flavor, if desired.)
  • 32 oz bean sprouts (Add all the sprouts; they can be cooked for less time to retain some crunch.)
  • soy sauce (To taste; add enough to season and adjust the salt at the end.)
  • white rice (For serving as a side dish. The amount is not specified in the source; estimate for six servings.)

Steps

  1. 1

Place the pork ribs in a large pot or covered wok. Season them with salt and pepper, then add the garlic cloves, bay leaves, and enough water to cover the meat.

  2. 2

Cover the pot and cook over medium-low heat for approximately 1 hour, until the water has evaporated and the ribs are cooked and beginning to brown in their own fat. Check the meat at around 55 minutes.

  3. 3

Once the liquid has evaporated, continue cooking the ribs, stirring frequently so they brown evenly without sticking to the bottom.

  4. 4

Remove and discard the bay leaves.

  5. 5

Add the white onion and poblano peppers to the pot with the ribs. Mix well and cook for approximately 2 minutes, until they begin to soften and release their aroma.

  6. 6

Add the bean sprouts and mix until they are distributed among the ribs, onion, and poblanos.

  7. 7

Add soy sauce to taste and mix again. Taste carefully and adjust the salt if necessary.

  8. 8

Cover and cook for approximately 5 minutes. Remove from the heat when the sprouts are hot but still retain some crunch; cook them for a few more minutes if you prefer them completely soft.

  9. 9

Serve the chop suey hot with white rice.

Notes

The original recipe does not specify the amounts of soy sauce, salt, pepper, water, or rice; add them to taste. The bean sprouts are best slightly crunchy, according to the preference indicated in the source.
