Ingredients

  • 4 Corn on the cob (shucked and cleaned)
  • 4 tbsp Butter (melted)
  • 0.25 cup Mayonnaise
  • 2 tbsp Sour cream
  • Chili powder (to taste)
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • 0.5 cup Cotija cheese (crumbled)
  • 2 tbsp Fresh cilantro (chopped)
  • 1 Lime (cut into wedges for serving)

Steps

  1. 1

Boil or grill the corn on the cob until the kernels are tender and slightly charred if grilling, about 10-15 minutes.

  2. 2

In a small bowl, whisk together the melted butter, mayonnaise, and sour cream until smooth.

  3. 3

Brush the creamy butter mixture generously over all sides of the warm corn cobs.

  4. 4

Dust the corn with chili powder, garlic powder, and onion powder to taste.

  5. 5

Roll the seasoned corn in the crumbled Cotija cheese until well-coated.

  6. 6

Garnish with freshly chopped cilantro and serve immediately with lime wedges on the side.

Notes

For a spicier version, add a dash of cayenne pepper or smoked paprika. If Cotija cheese is unavailable, Feta cheese makes a suitable salty substitute.
