Instant Pot Beef Pulao
A fragrant and flavorful beef pulao made efficiently in the Instant Pot. This recipe yields tender beef and perfectly cooked basmati rice, seasoned with a blend of aromatic spices.

Ingredients
- 1 lb boneless beef (cut into cubes)
- 1.5 cup basmati rice
- 2 cup hot water
- neutral oil (for sautéing)
- 1 onion (small to medium, sliced)
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 2 green chilies (optional)
- 1.5 tbsp pulao masala (or 1/2 packet; if using packet, omit extra salt and chili)
- 1.5 tsp salt (adjust if using pre-mixed masala)
- 0.5 tsp red chili powder (optional)

Set the Instant Pot to sauté mode. Add neutral oil and sauté the sliced onions until golden brown.

Add the cubed beef, garlic paste, ginger paste, green chilies, pulao masala, salt, and red chili powder. Stir well to coat the meat in the spices.

Add a small amount of water if needed to prevent sticking, then seal the Instant Pot. Pressure cook on HIGH for 30 minutes to cook the meat and create a broth.

Perform a quick release of the pressure once the timer finishes.

Add the basmati rice and 2 cups of hot water to the pot. Stir gently to combine.

Seal the Instant Pot and pressure cook on LOW for 12 minutes.

Allow for a natural pressure release before opening the lid and serving.
Notes
If using the alternative spice blend (coriander, cumin, fennel, black pepper, cinnamon, cloves, cardamom, turmeric, garam masala), ensure you adjust the salt to 1.25 tsp. Always ensure the rice is rinsed well before adding to the pot for the best texture.
