The Easiest Brown Bread
A simple, healthy five-ingredient oat bread made with natural yogurt and no yeast. It results in a dense, nutritious loaf perfect for serving with butter and jam.

Ingredients
- 500 ml natural yogurt (1 large tub)
- 1 egg (beaten)
- 300 g oats (plus extra for sprinkling on top)
- 2 tsp bread soda (also known as baking soda or bicarbonate of soda)
- 2 tbsp mixed seeds (optional)
- 0.5 tsp salt (optional)

Preheat your oven to 180°C / 350°F / Gas mark 4.

Grease a 2lb loaf tin or line it with parchment paper to prevent sticking.

In a large mixing bowl, combine the 500ml of natural yogurt and the beaten egg, stirring well until fully combined.

In a separate bowl, mix together the 300g of oats, 2 tsp of bread soda, and 0.5 tsp of salt (if using).

Add the dry oat mixture to the yogurt mixture and stir thoroughly until a thick batter forms.

Transfer the mixture into the prepared 2lb loaf tin and smooth the top.

Sprinkle the top of the loaf with a handful of extra oats and the mixed seeds if using.

Place the tin in the preheated oven and bake at 180°C (350°F) for 30 minutes.

After 30 minutes, lower the oven temperature to 150°C / 300°F / Gas mark 2 and cook for a further 30 minutes.

Remove the bread from the oven and take it out of the tin.

Allow the loaf to cool completely on a wire rack before slicing and serving with butter and jam.
Notes
Bread soda is another name for bicarbonate of soda or baking soda. This recipe is naturally yeast-free. For a gluten-free version, ensure you use certified gluten-free oats.
