Ingredients

  • 200 g plain biscuits
  • 100 g melted butter
  • 2 mangoes (puréed)
  • 4 medjool dates
  • 0.75 cup heavy whipping cream

Steps

  1. 1

Crush the plain biscuits into fine crumbs using a food processor or by placing them in a bag and rolling over them with a rolling pin.

  2. 2

In a bowl, combine the biscuit crumbs with the 100g of melted butter until the mixture resembles wet sand.

  3. 3

Press the biscuit mixture firmly into the bottom and up the sides of a tart tin to create the crust. Place in the refrigerator to chill while you prepare the filling.

  4. 4

Prepare the mango purée by blending the flesh of 2 mangoes until smooth.

  5. 5

Pit the medjool dates and blend them with the mango purée until the mixture is completely smooth.

  6. 6

In a separate chilled bowl, whip the heavy whipping cream until stiff peaks form.

  7. 7

Gently fold the mango-date mixture into the whipped cream until well combined and a mousse consistency is achieved.

  8. 8

Pour the mango mousse filling into the chilled tart crust and smooth the top with a spatula.

  9. 9

Refrigerate the tart for at least 2 hours, or until set, before serving.

Notes

The source lists '3/4 Half cup' for the cream; this has been interpreted as 3/4 cup based on standard mousse ratios. Ensure the dates are soft for easier blending.
