High-Protein Chocolate Chip Brioche Buns
Soft, lightly sweetened yogurt-based brioche buns studded with dark chocolate. These quick buns are baked in two stages for a fluffy interior and lightly brushed with honey and melted butter while warm.

Ingredients
- 420 g Greek yogurt
- 3 eggs
- 2 tbsp honey (Use 2–4 tbsp depending on how sweet you want the buns; 2 tbsp is used for the nutrition estimate.)
- 1 tsp vanilla extract
- 400 g flour (Use bread flour or all-purpose flour.)
- 2 tsp baking powder
- 0.25 tsp bicarbonate of soda (Baking soda.)
- 180 g dark chocolate, chopped or chocolate chips
- 0.5 tsp salt
- oil (A little, for greasing the parchment paper.)
- honey, for brushing (Optional; amount to taste.)
- butter, melted, for brushing (Optional; mix with the honey for brushing the hot buns.)

Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and lightly brush or rub the parchment with a little oil so the buns release easily.

Add the Greek yogurt and eggs to a large mixing bowl. Whisk until the mixture is smooth and evenly combined.

Add the honey and vanilla extract to the yogurt-and-egg mixture. Whisk again until fully incorporated.

In a separate bowl, mix the flour, baking powder, and bicarbonate of soda so the leavening agents are distributed evenly.

Pour the dry mixture into the wet mixture. Add the chopped dark chocolate or chocolate chips and the salt. Stir thoroughly until all the flour is incorporated and a thick, sticky dough forms.

Using an ice-cream scoop or a spoon, portion the dough into 12 rounded buns on the prepared baking tray, leaving space between them for expansion.

Let the portioned buns settle for 2–3 minutes. Transfer them directly to the preheated oven.

Bake at 200°C (400°F) for 5 minutes, until the buns begin to puff and the outside starts to set.

Without removing the tray, reduce the oven temperature to 180°C (350°F). Continue baking for 12–15 minutes, until the buns are risen, lightly golden, and cooked through.

If desired, immediately brush the hot buns with a mixture of honey and melted butter. Serve warm or allow them to cool before serving.
Notes
