  • 20 oz cheese ravioli (refrigerated or frozen)
  • 2 tbsp unsalted butter
  • 3 clove garlic (minced)
  • 0.5 cup sun-dried tomatoes (chopped, oil-packed)
  • 0.5 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated)
  • 0.5 tsp red pepper flakes
  • 0.5 tsp dried oregano
  • 0.5 tsp dried thyme
  • 2 cup fresh baby spinach (packed)
  • salt and black pepper (to taste)
  • fresh basil (for garnish, chopped)

Steps

    Bring a large pot of salted water to a boil. Cook the cheese ravioli according to the package instructions until al dente. Drain and set aside.

    In a large skillet or pan over medium heat, melt the butter.

    Add the minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until the garlic is fragrant and the tomatoes have softened slightly.

    Pour in the chicken broth and heavy cream. Stir to combine and bring the mixture to a gentle simmer.

    Stir in the grated parmesan cheese, red pepper flakes, dried oregano, and dried thyme. Continue to simmer for 3-5 minutes until the sauce begins to thicken.

    Add the fresh baby spinach to the sauce. Stir until the spinach is just wilted, about 1 minute.

    Season the sauce with salt and black pepper to taste.

Notes

For a vegetarian version, substitute the chicken broth with vegetable broth. If the sauce becomes too thick, add a splash of the pasta cooking water to reach your desired consistency.
