Spicy Glass Noodle Salad with Sausage and Shrimp

Ingredients
- 100 g Glass noodles (Dry; soak according to package directions, then drain)
- 150 g Shrimp (Peeled and deveined)
- 100 g Sausage (Thinly sliced; Thai-style sausage or another cooked sausage may be used)
- 0.5 Red onion (Thinly sliced)
- 1 Tomato (Cut into wedges)
- 30 g Chinese celery or regular celery (Sliced; include tender leaves if available)
- 3 Fresh Thai chilies (Adjust to taste)
- 2 cloves Garlic (Chopped or pounded)
- 3 tbsp Lime juice (Freshly squeezed)
- 2 tbsp Fish sauce (Adjust to taste)
- 1 tbsp Granulated sugar (Adjust the sweet-sour balance to taste)
- Water (For soaking and boiling the noodles and seafood)

Prepare all of the vegetables before cooking: thinly slice the onion, cut the tomato into wedges, slice the celery, and chop or pound the garlic and chilies. Keep the vegetables in a large mixing bowl.

Soak the dry glass noodles in room-temperature water until pliable, following the package directions. Drain thoroughly and cut the noodles into shorter, easy-to-eat lengths if needed.

Bring a saucepan of water to a simmer. Add the shrimp and cook until pink, opaque, and just cooked through, about 2–3 minutes. Remove and drain.

Using the same simmering water, blanch the sliced sausage until heated through, about 1–2 minutes. Remove and drain.

Add the soaked glass noodles to the hot water and blanch briefly, about 30–60 seconds, until transparent and tender but not mushy. Drain very well.

Make the dressing in a small bowl by combining the lime juice, fish sauce, sugar, garlic, and chilies. Stir until the sugar dissolves, then taste and adjust the balance of sour, salty, sweet, and spicy flavors.

Add the warm glass noodles, shrimp, and sausage to the bowl with the onion, tomato, and celery. Pour over the dressing and toss gently until every noodle and ingredient is evenly coated.

Taste once more and adjust with additional lime juice, fish sauce, sugar, or chilies as needed. Serve immediately while the noodles are still slightly warm or at room temperature.
