- 2 cup All-purpose flour (For the cake batter)
- 0.667 cup Granulated sugar (For the cake batter)
- 0.5 cup Vegetable oil
- 2 Large eggs
- 0.5 cup Brown sugar (For the cake batter)
- 1 tsp Vanilla bean paste
- 0.25 cup Milk
- 1 tsp Baking powder
- 1 tsp Baking soda
- 0.25 tsp Salt
- 1.5 tsp Ground cinnamon (For the cake batter)
- 1 tsp Pumpkin spice
- 0.5 cup All-purpose flour (For the crumble topping)
- 4 tbsp Light brown sugar (For the crumble topping)
- 4 tbsp Granulated sugar (For the crumble topping)
- 0.5 tsp Ground cinnamon (For the crumble topping)
- Ground nutmeg (2 tiny pinches)
- 4 tbsp Unsalted butter (Cold and cubed; for the crumble topping)
Steps
- 1
Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, or coat it thoroughly with nonstick spray.
- 2
In a large bowl, whisk the brown sugar, granulated sugar, and eggs until smooth and well combined.
- 3
Add the vegetable oil and whisk until fully incorporated.
- 4
Add the pumpkin purée, milk, and vanilla bean paste. Mix until the wet mixture is smooth and uniform.
- 5
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin spice.
- 6
Gradually fold the dry ingredients into the wet mixture with a spatula, stopping as soon as no dry streaks remain. Do not overmix.
- 7
Prepare the crumble topping by combining the topping flour, light brown sugar, granulated sugar, cinnamon, and nutmeg in a bowl.
- 8
Add the cold cubed butter to the topping mixture and work it in with your fingertips until coarse, irregular crumbs form.
- 9
Pour the batter into the prepared loaf pan and smooth the surface. Evenly scatter the crumble topping over the batter.
- 10
Bake at 350°F (175°C) for 50–60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- 11
Let the loaf cool before slicing so the crumb can set. Remove it from the pan using the parchment overhang, then slice and serve.
Notes
The source does not specify a cooling time; cool completely or until comfortably sliceable before cutting. Store covered at room temperature for short-term storage, or refrigerate for longer storage.
