  • 6 ears fresh corn (Kernels removed)
  • 3 small chicken breasts (Sliced in half horizontally; chicken thighs may be substituted)
  • 1 tbsp oil (For seasoning and cooking the chicken; additional oil may be needed for the pan)
  • 1 tsp chili powder (For chicken seasoning)
  • 1 tsp paprika (For chicken seasoning)
  • 1 tsp garlic powder (For chicken seasoning)
  • 1 tsp onion powder (For chicken seasoning)
  • 1 tsp ground cumin (For chicken seasoning)
  • 1 tsp salt (For chicken seasoning)
  • 1 tsp black pepper (For chicken seasoning)
  • 2 tbsp butter (For cooking the corn)

  • 0.5 medium red onion (Finely diced)
  • 1 jalapeño (Finely diced)
  • 0.25 cup cilantro (Chopped, plus more for garnish)
  • 1 cup cotija cheese (Crumbled, plus extra for garnish)
  • 0.75 cup mayonnaise (For the dressing)
  • 0.75 cup sour cream (For the dressing)
  • 1 lime lime juice (Juice of 1 lime)
  • 1 tbsp chipotle peppers in adobo sauce (Finely chopped if needed)
  • 1 tsp Tajín (For the dressing)
  • 1 tsp chili powder (For the dressing)
  • 0.5 tsp garlic powder (For the dressing)
  • 0.5 tsp onion powder (For the dressing)
  • 0.5 tsp salt (Or to taste, for the dressing)
  • 0.5 tsp black pepper (For the dressing)
  • cotija cheese (Extra, for garnish)
  • Tajín (For garnish; chili powder may also be used)
  • cilantro (Additional, for garnish)
  • lime wedges (For serving)

Steps

    Slice each chicken breast in half horizontally to make thinner pieces. Pat the chicken dry with paper towels.

    Drizzle the chicken with the oil. Combine the chili powder, paprika, garlic powder, onion powder, cumin, salt, and black pepper, then season the chicken evenly on all sides.

    Fill a large pot about halfway with water, add a generous amount of salt, and bring it to a boil over high heat.

    Add the pasta and cook it al dente according to the package directions. Drain thoroughly, rinse under cold water to stop the cooking, and set aside.

    Heat a large skillet over medium-high heat. Add a little oil if needed, and place the seasoned chicken in the hot pan.
