Ingredients

  • 1 lb linguine
  • 0.5 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated)
  • 3 garlic (cloves, minced)
  • 1 tbsp olive oil (can use oil from the sun-dried tomato jar)
  • 0.25 cup fresh basil (chopped for garnish)
  • salt (to taste)
  • black pepper (to taste)

Steps

    Bring a large pot of salted water to a boil.

    Add the linguine to the boiling water and cook according to package instructions until al dente.

    While the pasta cooks, heat olive oil in a large skillet over medium heat.

    Add the minced garlic and chopped sun-dried tomatoes to the skillet. Sauté for 1-2 minutes until the garlic is fragrant.

    Pour in the heavy cream and bring to a gentle simmer.

    Stir in the grated parmesan cheese until melted and the sauce has thickened slightly.

    Season the sauce with salt and black pepper to taste.

    Reserve a small cup of pasta water, then drain the linguine.

    Add the cooked linguine directly into the skillet with the sauce.

    Toss the pasta to coat thoroughly, adding a splash of reserved pasta water if the sauce is too thick.

Notes

For extra flavor, use the oil from the sun-dried tomato jar to sauté the garlic. You can also add protein like grilled chicken or shrimp to make it a heartier meal.
