  • 4 boneless, skinless chicken breasts (About 6 oz each; pound very thick breasts to an even thickness if needed)
  • 1 red bell pepper (Sliced)
  • 1 green bell pepper (Sliced)
  • 1 small onion (Sliced)
  • 1 cup reduced-fat shredded Mexican-blend cheese
  • 1 tbsp olive oil
  • 1.5 tbsp fajita seasoning
  • 0.5 cup salsa
  • 0.5 tsp garlic powder
  • salt (To taste)
  • black pepper (To taste)
  • fresh cilantro (Optional; chopped, for garnish)
  • lime wedges (For serving)
  • cooking spray (For lightly coating the baking dish)

Steps

    Preheat the oven to 400°F (200°C). Lightly coat a 9 × 13-inch baking dish with cooking spray.

    Pat the chicken breasts dry with paper towels. If any breasts are very thick, gently pound them to an even thickness so they cook uniformly.

    Rub the chicken breasts with the olive oil, fajita seasoning, garlic powder, salt, and black pepper, coating all sides evenly.

    Arrange the seasoned chicken breasts in the prepared baking dish. Add the sliced red bell pepper, green bell pepper, and onion around the chicken.

    Spoon the salsa evenly over the tops of the chicken breasts.

    Loosely cover the baking dish with aluminum foil. Bake for 20–25 minutes, until the chicken is nearly cooked through.

The assembled, uncooked dish can be covered and refrigerated for up to 24 hours before baking. Cool leftovers completely before freezing in airtight containers for up to 3 months.
