Ingredients
- 20 oz refrigerated cheese tortellini
- 2 cup rotisserie chicken (shredded; can substitute with smoked sausage)
- 1 cup cherry tomatoes (whole or halved)
- 2 cup fresh baby spinach
- 8 oz cream cheese (one block, optional)
- 4 slices cooked bacon (crumbled)
- 0.5 cup sun-dried tomatoes (drained and chopped)
- 1 cup chicken bone broth
- 0.5 cup heavy cream
- black pepper (to taste)
- garlic powder (to taste)
- 1 cup shredded mozzarella cheese (plus more for topping if desired)
Steps
- 1
Preheat your oven to 375°F (190°C) and grease a 9x12-inch baking dish.
- 2
Add the refrigerated tortellini, shredded rotisserie chicken, and cherry tomatoes to the baking dish. You can cut the tomatoes in half first or leave them whole.
- 3
Add the fresh baby spinach, crumbled bacon, and sun-dried tomatoes to the dish.
- 4
Place the block of cream cheese in the center (this is optional but adds creaminess).
- 5
Pour the chicken bone broth and heavy cream over the ingredients.
- 6
Season the mixture with black pepper, garlic powder, and any other seasonings you prefer.
- 7
Sprinkle the shredded mozzarella cheese over the top.
- 8
Give the ingredients a light mix to distribute the liquid and seasonings, then cover the dish tightly with aluminum foil.
- 9
Bake at 375°F for 25 minutes.
- 10
If you want the cheese extra bubbly and browned, remove the foil after 25 minutes, add more cheese if desired, and bake uncovered for a few additional minutes.
Notes
You can substitute the rotisserie chicken with smoked sausage or another cooked protein of your choice. The cream cheese block is optional but recommended for a thicker, richer sauce.
