Weights are estimates. Together, the ingredients weigh about 1.25 kg before cooking, which is about 155 g per serving.
Steps
Heat a skillet over medium heat. Add the chopped onion and cook until soft and translucent.
Stir in the minced garlic and cook briefly, until fragrant.
Add the ground beef and cook, breaking it apart with a spoon, until browned.
Mix in the tomato paste, cumin, smoked paprika, paprika powder, chili flakes, garlic powder, salt, and black pepper.
Pour in the water and simmer until the beef mixture thickens and becomes rich and flavorful. Remove it from the heat.
In a blender or food processor, combine the avocado, cilantro, garlic, lime juice, olive oil, salt, pepper, and water.
Blend the avocado mixture until smooth and creamy, adding more water if needed until it reaches a drizzle-friendly consistency.
Roll each tortilla half into a cone shape and secure the edge with a toothpick so the cone holds its form.
Place half a slice of cheese inside each cone, pressing it gently against the tortilla.
Spoon the prepared beef filling into each cone.
Sprinkle about 1 tablespoon of grated mozzarella on top of the filling in each cone.
Heat a thin layer of olive oil in a large skillet over medium heat.
Place the filled cones in the skillet and cook, turning carefully, until the tortillas are golden and crispy and the cheese has melted.
Once the cones hold their shape, carefully remove the toothpicks.
Serve the cones warm and crunchy, drizzled with avocado sauce or with the sauce on the side for dipping.
Notes
The source also gives an optional baking method: bake the filled cones at 180°C (350°F) until the tortillas are crispy and the cheese melts. The source does not specify a baking time. Suggested alternative fillings include shredded chicken, taco-seasoned beans, ground turkey, or roasted vegetables; suggested sauces include salsa, sour cream, guacamole, or spicy chipotle sauce.
