Ingredients
- 120 g Split red lentils
- 70 g Ditalini (Choose a pasta shape with a cooking time similar to that of the lentils; the ditalini indicated cook in 11–12 minutes.)
- Pumpkin (Diced small; as needed.)
- Mushrooms (As needed.)
- Radicchio (As needed.)
- Yellow tomato passata (As needed.)
- 2 tbsp Parmesan
- Water (As needed; preferably slightly warm. Add more during cooking if necessary.)
Steps
- 1
Add the split red lentils, finely diced pumpkin, mushrooms, radicchio, yellow tomato passata, and ditalini to the pan.
- 2
Add the water, preferably slightly warm, and stir to distribute the ingredients.
- 3
Cover the pan and cook for about 15 minutes. Check the cooking as you go and add more water if necessary; if you choose ditalini with an 11–12-minute cooking time, the pasta and lentils will cook in a similar amount of time.
- 4
Finish with the Parmesan and serve hot.
Notes
The source gives precise quantities only for the lentils, ditalini, and Parmesan; the pumpkin, mushrooms, radicchio, passata, and water are listed as “as needed.” It does not specify the amount of water or the number of servings. Split red lentils do not need to be soaked.
