  • 4 Whole scallops in the shell (Fresh, whole scallops with roe and skirts attached)
  • Chili (For the scallop crumb)
  • Ginger (For the scallop crumb)
  • Spices (Assorted spices for the crumb)
  • 0.5 cup Butter (To be emulsified with roe)
  • Bread dough (Soft bread dough to be baked in shells)
  • 1 L Water (For making the stocks)

Steps

    Clean the scallops, separating the main white muscle (meat) from the roe (orange part), the skirts (frilly edges), and the belly. Reserve the shells.

    Prepare the Scallop Crumb: Take the scallop skirts and dry them out completely. Once dried, puff them (fry briefly) and season with chili, ginger, and spices. Blitz or crush into a fine, flavorful crumb.

    Prepare the Dashi Stock: Use the cleaned scallop skirts to simmer a rich dashi-style stock.

    Prepare the Roe Butter: Take the scallop roe and blend or emulsify it into softened butter. This can be used to finish fish dishes or as a base for sauces.

    Prepare the Dark Stock: Take the top parts of the scallop shells and simmer them to create a dark, deep-flavored scallop stock.

    Prepare the Scallop Sauce: Combine the dashi stock (from the skirts) and the dark stock (from the shells) to create a concentrated scallop sauce.

    Bake the Bread: Use the dark scallop stock as the liquid component in your bread dough for extra flavor. Place portions of the soft bread dough into the cleaned scallop shells and bake until golden.

Notes
