My Go-To Smoked Salsa
A smoky, spicy tomato salsa with jalapeño, habanero, serrano, and cilantro. Adobo is the secret ingredient, adding a richer flavor; use it judiciously so it does not overpower the salsa.

Ingredients
- 7 beefsteak tomatoes
- 2 jalapeños
- 1 habanero
- 1 serrano pepper
- 1 red onion
- 1 head garlic
- 1 lime (Juice; add while blending.)
- 2 handfuls cilantro (A couple of handfuls.)
- salt (To taste; about 1 tablespoon.)
- Adobo (To taste; about 1 tablespoon. Do not use so much that it overpowers the salsa.)
Steps
- 1
Slice the tomatoes, jalapeños, habanero, serrano, red onion, and garlic. Leave the lime and cilantro whole for now.
- 2
Smoke the sliced ingredients for 1½–2 hours. The source does not specify a smoker temperature.
- 3
Remove the skins from the smoked tomatoes.
- 4
Blend the smoked ingredients together with the cilantro, adding the lime juice while blending.
- 5
Add salt and Adobo at the end, seasoning to taste. Use the Adobo sparingly, since too much can overpower the salsa.
Notes
The source does not specify a smoking temperature, exact amounts for the handfuls of cilantro, or a precise quantity for salt and Adobo beyond about 1 tablespoon each to taste.
