Ingredients
- 1.5 lb Beef chuck or braising steak (cut into bite-sized chunks)
- 2 tbsp Cornflour (for coating the beef)
- 4 tbsp Massaman curry paste (store-bought or homemade)
- 14 oz Coconut milk (1 can, full fat or light)
- 0.5 cup Beef stock
- 2 cup Potatoes (peeled and cubed)
- 1 Onion (diced)
- 1 tbsp Fish sauce
- 1 tbsp Brown sugar
- 2 tbsp Peanut butter (creamy or crunchy)
- Salt and Pepper (to taste)

Toss the beef chunks in cornflour until evenly coated.

Heat a pan over medium-high heat and brown the beef chunks in batches until a golden crust forms on the outside.

Transfer the browned beef to the slow cooker.

Add the diced potatoes, onions, curry paste, coconut milk, beef stock, fish sauce, brown sugar, and peanut butter to the slow cooker.
