Ingredients

  • 1.5 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried oregano
  • salt (to taste)
  • black pepper (to taste)
  • 0.25 cup parmesan cheese (grated)
  • 1 tbsp fresh parsley (chopped for garnish)

Steps

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

Wash the baby potatoes and cut them in half.

  3. 3

Place the halved potatoes in a large mixing bowl.

  4. 4

Drizzle the potatoes with 2 tablespoons of olive oil.

  5. 5

Add the garlic powder, onion powder, dried oregano, salt, and black pepper to the bowl.

  6. 6

Toss the potatoes thoroughly until they are evenly coated with the oil and spices.

  7. 7

Spread the potatoes in a single layer on a large baking sheet, cut-side down for maximum crispiness.

  8. 8

Roast in the preheated oven for 20-25 minutes, or until the potatoes are fork-tender and the bottoms are golden brown and crispy.

  9. 9

Remove the potatoes from the oven and immediately sprinkle with the grated parmesan cheese while they are still hot.

  10. 10

Garnish with fresh chopped parsley before serving.

Notes

For extra crispy potatoes, ensure the cut side is placed directly against the baking sheet. You can also add a pinch of red pepper flakes if you prefer a bit of heat.
