Ingredients

  • 1 kg chicken (cut into pieces)
  • 15 almonds (soaked and peeled)
  • 4 red chili (dried whole)
  • 3 tbsp mustard oil (for cooking)
  • 6 clove garlic (minced or paste)
  • 0.5 cup yogurt (plain)

Steps

  1. 1

Prepare a paste by grinding the soaked almonds and dried red chilies together with a little water until smooth.

  2. 2

In a large bowl, marinate the chicken pieces with the yogurt and garlic. Let it sit for at least 15-20 minutes.

  3. 3

Heat mustard oil in a heavy-bottomed pan or kadai until it begins to smoke slightly, then reduce the heat.

  4. 4

Add the marinated chicken to the pan and sauté over medium-high heat until the chicken is browned and the moisture starts to evaporate.

  5. 5

Stir in the almond and chili paste. Cook the mixture, stirring frequently, until the oil begins to separate from the masala.

  6. 6

Cover and simmer on low heat until the chicken is fully cooked through and tender.

Notes

The recipe is visually demonstrated in the video; quantities for chicken and yogurt are estimated based on standard preparation ratios for this style of curry. Ensure mustard oil is heated properly to remove its raw pungency before adding ingredients.
