Bacon and Caramelized Onion Dip

Ingredients
- 200 g cream cheese
- 2 tbsp heavy cream
- 2 tbsp Parmesan or Pecorino cheese (Use grated Parmesan or Pecorino.)
- 200 g bacon (Cut into small pieces.)
- 1 large onion (Thinly sliced; approximately 200 g edible portion.)
- 2 tsp brown sugar
- 1 tsp smoked paprika

- 3 ramitas chives (Use only the green part, finely chopped; approximately 3 g.)

Prepare all the ingredients. Cut the bacon into small pieces, thinly slice the onion, and finely chop only the green part of the chives.

Place the bacon in a large cold skillet and cook over medium heat for 8 to 10 minutes, stirring occasionally, until golden brown and crispy. Remove it with a slotted spoon and set aside. Leave approximately 1 tablespoon of the rendered fat in the skillet.

Add the sliced onion to the skillet with the bacon fat. Cook over medium-low heat for 10 to 15 minutes, stirring frequently, until very soft, golden, and jammy.

Add the brown sugar, smoked paprika, and garlic powder. Stir and cook for 1 to 2 minutes, until the spices are fragrant and the onion is well caramelized.

Add the crispy bacon back to the skillet and mix it with the caramelized onion. Remove the skillet from the heat and let the mixture cool slightly for a few minutes.

In a bowl, mix the cream cheese, heavy cream, and Parmesan or Pecorino until smooth. Season with salt and pepper to taste.

Add the bacon and onion mixture to the cream cheese. Stir in the chopped chives and mix until all the ingredients are evenly distributed.

Taste the dip and adjust the salt, pepper, and honey to taste. Serve warm or at room temperature with toasted bread, crackers, or vegetables.
