Ingredients
- 12 Siling Haba (long green chili peppers) (stems kept on, slit lengthwise and deseeded)
- 0.5 lb Ground pork
- 4 oz Cheddar cheese (cut into long thin strips)
- 3 clove Garlic (minced)
- 0.25 cup Onion (finely minced)
- 1 tbsp Soy sauce
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 12 Lumpia wrappers (spring roll wrappers)
- 2 cup Cooking oil (for deep frying)
- 1 Egg (beaten, for sealing wrappers)

Prepare the chilies by making a vertical slit from the top (just below the stem) to the bottom. Carefully remove the seeds and pith using a small spoon or knife to reduce heat. Rinse and pat dry.

In a mixing bowl, combine the ground pork, minced garlic, minced onion, soy sauce, salt, and black pepper. Mix thoroughly until the seasonings are evenly distributed.

Stuff each prepared chili pepper with a small amount of the pork mixture, pressing it inside the cavity.

Insert a strip of cheddar cheese into the chili alongside the pork mixture.

Lay a lumpia wrapper on a flat surface in a diamond shape. Place the stuffed chili in the center, ensuring the stem sticks out of one side of the wrapper.

Fold the bottom corner over the chili, tuck in the sides, and roll tightly toward the top corner. Seal the edge with a dab of beaten egg.

Heat about 2 inches of cooking oil in a deep pan or wok over medium heat until it reaches approximately 350°F (175°C).

Carefully place the lumpia in the hot oil in batches. Fry for 4-6 minutes, turning occasionally, until the wrapper is golden brown and the pork filling is fully cooked through.

Remove the lumpia from the oil and drain on a wire rack or paper towels. Serve hot with sweet chili sauce or a vinegar dipping sauce.
Notes
Wear gloves when handling and deseeding the chilies to avoid skin irritation. If you prefer less heat, ensure all white pith is removed from the interior of the peppers.
