Frozen Protein S’mores Bars

Ingredients
- 12 graham crackers (divided)
- 1 tub low-cal / low-fat Cool Whip (sugar-free or low-fat variety)
- 2 scoops vanilla whey protein (marshmallow flavor also recommended)
- 55 g Lily’s reduced-sugar chocolate chips (or other sugar-free chocolate chips)
- 1 tsp coconut oil (for melting chocolate)

Lay out 6 graham crackers on a baking sheet to serve as the base of the bars.

In a small microwave-safe bowl, combine the Lily's reduced-sugar chocolate chips and 1 teaspoon of coconut oil. Melt in the microwave in short intervals, stirring until completely smooth.

Spread the melted chocolate mixture evenly over the graham crackers on the baking sheet.

In a separate mixing bowl, combine the tub of Cool Whip with 2 scoops of vanilla whey protein. Mix thoroughly until the protein powder is fully incorporated and the mixture is smooth.

Once the chocolate layer has hardened slightly, spread the protein-infused Cool Whip mixture evenly over the chocolate-covered crackers.

Place the remaining 6 graham crackers on top of the Cool Whip layer to form sandwiches.

Place the baking sheet in the freezer and freeze until the bars are firm, typically at least 2 hours.

Once frozen, cut into 6 individual bars and serve immediately.
Notes
The author mentions using Ryse's marshmallow-flavored protein for a more authentic s'mores taste, though vanilla works well. Ensure the Cool Whip is thawed enough to mix but still cold.
