Ingredients
- 1 lb large Gulf shrimp (Cleaned and deveined; remove the legs but leave the shells on; butterfly along the back without cutting completely through.)
- 8 tbsp unsalted butter (Softened; microwave for about 30 seconds until very soft and spreadable but not completely melted.)
- 6 garlic (Cloves, minced.)
- 1 fresh parsley (Small handful, chopped, plus more for garnish; reserve some for finishing.)
- salt (To taste; season generously.)
- black pepper (To taste; season generously.)
- paprika (To taste; season generously.)
- Old Bay seasoning (To taste; season generously.)
- cayenne pepper (To taste; use a little for heat.)
Steps
- 1
Preheat the oven to 400°F (205°C).
- 2
Clean and devein the shrimp, removing the legs while leaving the shells on. Using a sharp knife, butterfly each shrimp along the back, opening it without cutting completely through.
- 3
Microwave the softened butter for about 30 seconds, just until it is very soft and spreadable but not completely melted.
- 4
Stir the minced garlic and chopped parsley into the softened butter to make a garlic-herb butter paste.
- 5
Season the butter mixture generously with salt, black pepper, paprika, Old Bay seasoning, and a little cayenne pepper for heat. Reserve some chopped parsley for garnish.
- 6
Arrange the butterflied shrimp in a cast-iron skillet with the cut sides facing up.
- 7
Spread a generous amount of the garlic-parsley butter inside each butterflied shrimp, working it into the crevices.
- 8
Transfer the skillet to the preheated oven and bake at 400°F (205°C) for about 15 minutes, until the shrimp are pink, opaque, and cooked through.
- 9
Finish with the reserved fresh parsley. Spoon the garlicky melted butter from the bottom of the skillet over the shrimp.
- 10
Serve immediately while hot and buttery, with white rice or crusty bread if desired.
Notes
The source does not specify an exact amount for the parsley or seasonings; adjust them to taste. Shrimp are served in their shells. Serve with white rice or crusty bread to soak up the sauce.
