Ingredients
- 1.5 cup soy milk
- 2 tbsp cornstarch
- 1.5 cup dairy-free heavy cream (Vegan heavy cream or dairy-free whipping cream.)
- 0.667 cup light brown sugar (Packed.)
- 1 tbsp ground cinnamon
- 1 tsp ground ginger (Ginger powder.)
- 0.5 tsp ground nutmeg
- 1 tsp vanilla extract
- 0.125 tsp salt

- 1 cup roasted sweet potato (Skin removed and puréed; approximately 200 g.)

Roast a sweet potato until completely tender. Remove and discard the skin, then purée 1 cup of the cooked flesh until smooth. Set aside to cool.

Place the pot over medium-high heat. Whisk continuously as the mixture heats, until it thickens to a smooth custard-like consistency. Do not stop whisking, particularly around the bottom and edges of the pot, to prevent scorching or lumps.

Pour the mixture into an ice-cream maker. Add the sweet potato purée, then use the machine’s “mix” function to incorporate it evenly.
