Ingredients

  • 2 bags pre-cooked baby potatoes (baby potatoes; patted dry and halved or quartered)
  • 1 bag chili spice mix (divided use)
  • 300 g ground meat (choice of beef, pork, or mixed)
  • 250 g cherry tomatoes (finely chopped; divided)
  • 1 can canned corn (rinsed and drained)
  • 1 can canned black beans (rinsed and drained)
  • 100 g shredded cheese (grated cheese)
  • olive oil (for drizzling)
  • salt and pepper (to taste)
  • water (a splash if needed for the meat sauce)

Steps

    Preheat your oven to 220°C (425°F) using the fan/convection setting.

    Pat the pre-cooked baby potatoes dry with paper towels. Cut smaller potatoes in half and larger ones into quarters.

    Place the potatoes on a baking sheet and drizzle with olive oil. Season with salt, pepper, and 1 tbsp of the chili spice mix. Toss well to coat.

    Place the potatoes in the oven and bake for 15 minutes until they begin to get crispy.

    While the potatoes are baking, brown the ground meat in a pan over medium-high heat until crumbly and cooked through.

    Finely chop the cherry tomatoes. Add the remaining chili spice mix and most of the chopped tomatoes to the pan with the meat, reserving a handful of tomatoes for garnishing.

    Let the meat mixture simmer for 5 minutes. If the mixture seems too dry, add a small splash of water to create a light sauce around the meat.

    Remove the crispy potatoes from the oven. Spoon the meat mixture evenly over the potatoes.

    Top the tray with the rinsed corn and black beans, then sprinkle the shredded cheese over everything.

    Return the tray to the oven for 8-10 minutes, or until the cheese is melted and golden brown.

    Garnish with the reserved fresh cherry tomatoes before serving.

Notes

For a variation, you can add onions, chickpeas, or white beans as suggested by community comments. Ensure the potatoes are very dry before roasting to get the best crunch.
