  • 1 green bell pepper (diced)

  • 10 oz Rotel tomatoes (1 can diced tomatoes with green chilies)

  • 14.5 oz beef broth (1 can)
  • 1 packet chili seasoning (use your favorite brand)
  • 12 oz dry cheese tortellini (1 bag)
  • water (a splash, if needed to loosen sauce)
  • 2 tbsp heavy cream (a splash)
  • 4 oz sharp cheddar cheese (half of an 8 oz block, freshly grated)

Steps

    In a large pot or deep skillet, add one pound of ground beef and cook over medium-high heat until browned.

    If using lean ground beef, there should be little grease; if using higher fat beef, drain off the excess grease before proceeding.
