Ingredients

  • 1 cup cottage cheese
  • 3 eggs (large)
  • 0.75 cup all-purpose flour
  • 0.5 cup oats
  • 1 scoop vanilla protein powder (optional but adds protein)
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp butter (melted)
  • 2 tbsp brown sugar
  • 1 tbsp cinnamon (for swirl)

Steps

    Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan.

    In a blender, combine the cottage cheese, eggs, vanilla extract, and maple syrup. Blend until the mixture is completely smooth.

    Add the all-purpose flour, oats, baking powder, baking soda, 1 teaspoon of cinnamon, and the vanilla protein powder to the blender. Pulse or blend briefly until just combined.

    Pour the batter into the prepared 8x8 pan, spreading it evenly to the edges.

    In a small bowl, mix together the melted butter, brown sugar, and 1 tablespoon of cinnamon to create the swirl mixture.

    Drizzle the cinnamon swirl mixture over the top of the batter in the pan.

    Use a knife to gently swirl the cinnamon mixture into the batter to create a marbled effect.

Notes

Icing Options: Once cooled, top with a cream cheese icing (cream cheese, splash of vanilla, and maple syrup) or a classic glaze (powdered sugar and milk). For meal prep, store in the refrigerator and microwave individual slices for 45 seconds to serve.
