Ingredients

  • 700 g Criolla potatoes (Washed and halved)
  • 2 tbsp Olive oil (For seasoning the potatoes)
  • Salt (To taste, for the potatoes, beef, and dressing)
  • Black pepper (To taste)
  • 1 tsp Paprika (For the potatoes)
  • 1 tsp Garlic powder (Divided between the potatoes and beef)
  • Chili powder or Tajín (Optional, to taste)
  • 500 g Ground beef (Can be substituted with ground pork)
  • 1 tbsp Dried onion (For seasoning the beef)
  • 0.5 Red onion (Finely chopped)
  • 1 tbsp Mustard (For the beef)
  • 2 tbsp Steak sauce (To finish the beef)
  • 1 cup Guacamole (For serving)
  • 1 cup Pico de gallo (For serving)
  • 2 tbsp Fresh cilantro (Chopped, for serving)
  • 100 g Feta cheese (Crumbled; can be substituted with your preferred cheese)
  • 1 cup Plain Greek yogurt (For the healthy sour cream)
  • 1 tbsp Lime juice (For the dressing)
  • 1 tsp Sriracha (Adjust to taste)

Steps

  1. 1

Wash the criolla potatoes thoroughly and cut them in half. Pat them dry so the oil and seasonings adhere better.

  2. 2

Place the potatoes in a bowl. Add the olive oil, salt, pepper, paprika, garlic powder, and, if desired, chili powder or Tajín. Toss until all the halves are well coated.

  3. 3

Preheat the air fryer to 200 °C. Arrange the potatoes in the basket, preferably in a single layer so they brown evenly.

  4. 4

Cook the potatoes at 200 °C for approximately 20 minutes, shaking the basket or tossing them occasionally. They are ready when golden on the outside and tender in the center; if necessary, cook them for a few more minutes.

  5. 5

While the potatoes cook, heat a large skillet over medium heat. Add the ground beef and season with salt, pepper, dried onion, and garlic powder.

  6. 6

Brown the beef and break it into small pieces with a spatula. Cook until no longer pink and fully cooked, approximately 8 to 10 minutes.

  7. 7

Add the chopped red onion to the skillet. Cook and stir until it begins to soften, approximately 2 to 3 minutes.

  8. 8

Stir in the mustard and steak sauce. Mix to coat the beef, reduce the heat, and cook for 2 more minutes so the flavors meld.

  9. 9

Prepare the dressing by mixing the Greek yogurt, lime juice, salt, pepper, and sriracha in a small bowl. Taste and adjust the acidity, heat, and salt.

  10. 10

Assemble the bowls in layers: start with the golden potatoes, add the seasoned beef, and finish with guacamole, pico de gallo, cilantro, and feta cheese.

  11. 11

Serve with the Greek yogurt dressing drizzled on top or on the side. Enjoy immediately while the potatoes are still crispy.

Notes

The description indicates 20 minutes in the air fryer; the transcript mentions 25 minutes. Start checking at 20 minutes and continue cooking until the potatoes are golden and tender. The beef can be made with beef or pork. Adjust the heat of the chili powder, Tajín, and sriracha to taste.
