Chipotle Honey Chicken Bowl

Ingredients
- 2 lb boneless skinless chicken thighs (raw)
- 3 chipotle peppers in adobo
- 3 tbsp adobo sauce (from the chipotle can)
- 2 tbsp honey
- 2 lime juice (juice of 2 limes)
- 5 garlic cloves
- 1.5 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cup jasmine rice (uncooked)
- fresh cilantro (for garnish)
- 4 tbsp guacamole (1 tbsp per bowl)
- 4 tbsp pico de gallo (1 tbsp per bowl)
- 0.75 cup nonfat Greek yogurt
- 0.5 cup cilantro (packed)
- 2 lime juice (juice of 2 limes for sauce)
- 0.25 cup mild pickled jalapeños
- 1 garlic clove
- salt & pepper (to taste)
- water (a splash to thin sauce)

Place the chipotle peppers, adobo sauce, honey, juice of 2 limes, 5 garlic cloves, olive oil, salt, and pepper into a blender.

Blend the marinade ingredients until completely smooth.

Pour the marinade over the raw chicken thighs in a bowl or bag and let marinate for at least 30 minutes.

Cook the jasmine rice according to the package directions.

Heat a pan over medium-high heat. Add the marinated chicken and cook until fully cooked through and the edges are slightly caramelized from the honey.

While the chicken cooks, add the Greek yogurt, 1/2 cup packed cilantro, juice of 2 limes, pickled jalapeños, 1 garlic clove, salt, pepper, and a splash of water into a clean blender.

Blend the green sauce ingredients until smooth and creamy.

Slice the cooked chicken into bite-sized pieces.

Assemble 4 bowls by dividing the cooked rice equally, then adding the sliced chicken, pico de gallo, and fresh cilantro.

Finish each bowl with a heavy drizzle of the green sauce and a tablespoon of guacamole.
