3-Ingredient Spinach Quinoa Wraps
Inspired by Indian dosa, these flourless, gluten-free spinach wraps are made with soaked quinoa and fresh spinach. They are a nutritious, protein-packed alternative to traditional bread or store-bought wraps.

Ingredients
- 1 cup uncooked quinoa (white or tri-color)
- 2 cup water
- 1 handful spinach (fresh)
- salt (a pinch (optional))
- coconut oil (for greasing the pan)

Combine 1 cup of uncooked quinoa and 2 cups of water in a blender.

Allow the quinoa to rest in the water for 30 minutes to 1 hour to soften.

Add a big handful of spinach and a pinch of salt (if using) to the blender.

Blend the mixture thoroughly until the batter is smooth and vibrant green.

Lightly oil a non-stick pan (ceramic coating recommended) with coconut oil and warm it over medium-high heat.

Once the pan is hot, scoop out about 2/3 cup of the batter and pour it into the center of the pan, spreading it slightly if needed.

Cook for a few minutes on each side until set and lightly golden in spots. Flip carefully to avoid breaking.
Notes
Ensure the pan is truly non-stick (ceramic is recommended) and fully heated before pouring the batter to prevent sticking. If the wraps break when flipping, they may need more time to cook on the first side. These wraps are excellent for savory fillings like vegetables, hummus, or protein.
