Ingredients
- 20 g Honey
- 30 g Peach syrup
- Lime juice (to taste, typically 0.5 oz)
- Ice cubes (enough to fill the glass)
- Club soda (to top)
- Butterfly pea tea (brewed and cooled, for the top layer)
Steps
- 1
In a tall glass, combine 20g of honey and 30g of peach syrup.
- 2
Add lime juice to the syrup mixture to provide acidity and balance the sweetness.
- 3
Fill the glass with ice cubes.
- 4
Pour in club soda (sparkling water) until the glass is nearly full, leaving room for the tea layer.
- 5
Slowly pour the brewed butterfly pea tea over the top to create a beautiful layered effect. The blue tea will react with the lime juice at the bottom to create purple hues.
Notes
The acidity of the lime juice causes the butterfly pea tea to change color from deep blue to purple/pink. Adjust the honey and syrup amounts if you prefer a less sweet drink.
