- 3 unsliced brioche buns (tops cut off)
- 1 egg
- 1 tbsp sugar (for the custard)
- 0.25 cup yogurt (plain or Greek)
- 0.5 tsp vanilla extract
- 2 tbsp unsalted butter (melted)
- 0.25 cup white sugar (for coating)
- strawberry jam (optional filling)
- Nutella (optional filling)

Preheat your oven to 170°C (340°F).

Prepare the brioche buns by cutting the tops off. Use a teaspoon to gently push the soft insides down and against the sides to create a cavity for the custard, being careful not to puncture the bottom or sides of the bun.

In a small bowl, combine the egg, sugar, yogurt, and vanilla extract. Whisk the mixture together until it is completely smooth.

Pour the custard mixture into the prepared brioche buns, filling them right to the top.

Place the buns in the oven and bake for approximately 20 minutes, or until the custard is set and the tops of the buns are lightly golden.

While the buns are baking, melt the butter in the microwave.

Once the buns are cooked, remove them from the oven. Brush the sides and tops of the warm buns liberally with the melted butter.

Immediately dip and roll the buttered buns in white sugar until evenly coated.

Serve plain, or add a dollop of strawberry jam or Nutella to the top before serving.
Notes
The creator notes that unsliced brioche buns are the 'secret ingredient' to get the right structure. Ensure you don't press the bread so hard that you create holes, or the custard will leak out during baking.
