Ingredients

  • 3 large yellow onions (Thinly sliced)
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 8 oz pancetta (Diced or cut into small pieces)
  • 2 garlic cloves (Minced)
  • 2 tbsp white wine (For deglazing)
  • 1 tsp salt
  • 0.5 tsp fresh thyme
  • 0.5 tsp fresh rosemary

Steps

    Warm a large heavy-bottomed pot or Dutch oven over medium heat. Add the butter and vegetable oil, allowing the butter to melt without browning.

    Add the thinly sliced onions. Cook, stirring regularly, for about 10–15 minutes, allowing them to soften and develop deep brown color on the bottom of the pot.
