Ingredients

  • 2 tbsp olive oil (for searing)
  • 1.5 lb beef tips (steak seasoned)
  • 1 yellow onion (diced)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 6 cups vegetable stock
  • 2 tbsp all-purpose flour (mixed with water to thicken)
  • 0.25 cup water (to mix with flour)
  • 3 potatoes (peeled and cubed)
  • 1 packet brown gravy mix (optional seasoning boost)
  • 1 cup green beans (trimmed and cut)
  • 2 carrots (sliced)
  • 1 cup frozen corn
  • 8 oz tomato sauce
  • steak seasoning (to taste)

Steps

  1. 1

Heat olive oil in a large Dutch oven over medium-high heat.

  2. 2

Season the beef tips with steak seasoning and add them to the Dutch oven. Sear for about 5 minutes until they are browned on all sides.

  3. 3

Remove the browned beef tips from the pan and set aside.

  4. 4

In the same pan, add the diced onions, celery, and minced garlic. Sauté with additional seasonings until fragrant and softened.

  5. 5

Pour in the vegetable stock and scrape the bottom of the pan to release any browned bits.

  6. 6

Whisk together the flour and water to create a slurry, then stir it into the stock to help thicken the base.

  7. 7

Return the seared beef tips to the pot. Add the peeled and cubed potatoes along with another round of seasonings.

  8. 8

Cover the Dutch oven and simmer for 1 hour.

  9. 9

Stir in the packet of gravy seasoning (optional) for extra depth of flavor.

  10. 10

Add the green beans, sliced carrots, and frozen corn to the pot.

  11. 11

    Stir in the tomato sauce.

  12. 12

Cover and cook for another 20 to 30 minutes until the vegetables are tender and the beef is fully cooked through.

Notes

The author suggests that while the gravy seasoning packet is optional, it adds a specific richness to the broth. For the best results, ensure the beef is well-seared before simmering to lock in flavor.
