Vegan Mini Lobster Rolls with Smoked Tofu

Ingredients
- 180 g smoked tofu (grated)
- 3 tbsp vegan mayonnaise
- 1 lemon (juice of half used in mixture; remainder for wedges)
- 1 tsp dulse seaweed (sea bacon flakes)
- 1 tsp paprika
- 1 celery stalk (diced)
- 1 green onions (finely chopped)
- 0.25 bunch fresh chives (finely chopped)
- 1 tbsp plant-based margarine
- 8 dinner rolls

In a bowl, grate the smoked tofu using a box grater.

Add the vegan mayonnaise, the juice of half the lemon, the dulse seaweed flakes, and the paprika to the bowl with the tofu.

Finely chop the fresh chives and green onion, and dice the celery stalk.

Add the chopped herbs and celery to the tofu mixture and stir thoroughly to combine.

In a pan over medium heat, melt the plant-based margarine.

Toast the outer sides of the dinner rolls in the margarine until they are golden brown and crispy.

Slice the toasted rolls along the top to make a slit, being careful not to cut all the way through.

Fill the rolls generously with the smoked tofu mixture and serve immediately with a lemon wedge on the side.
Notes
This recipe is inspired by smoked tofu rillettes. It makes for an excellent picnic or party appetizer. Ensure the tofu is smoked for the best flavor profile to mimic the depth of a traditional lobster roll.
