Ingredients

  • 12 Eggs (Large eggs)
  • Salt (For boiling water to help with peeling)
  • Vinegar (For boiling water to help with peeling)
  • 1 cup Soy sauce
  • 0.5 cup White sugar (Part of the sweetener mix)
  • 0.5 cup Brown sugar (Part of the sweetener mix)
  • Acorn syrup (Optional; added for extra depth)
  • Garlic (A ton, minced)
  • Chilis (Sliced; adjust to heat preference)
  • Water (A little bit to dilute the marinade)
  • 1 tbsp Sesame oil
  • 1 tbsp Sesame seeds
  • 1 cup Green onions (A whole mess, chopped)

Steps

    Bring a pot of water to a boil. Add salt and vinegar to the water to help make the eggs easier to peel later.

    Carefully lower the eggs into the boiling water, being very careful not to crack them. Boil for about 6-7 minutes for a soft-boiled center.

    While the eggs cook, prepare an ice bath in a large bowl.

    Once the eggs are done, immediately transfer them to the ice bath to stop the cooking process and let them chill completely.

    Gently crack the eggshells and peel the eggs under running cold water for ease.

    In a large container, lay the peeled eggs flat.

    Add 1 cup of soy sauce and 1 cup of sweetener (using a mix of half white sugar and half brown sugar). Stir until the sugar is fully incorporated.

    Add a generous amount of minced garlic and sliced chilies to the container.

    Add a little bit of water to dilute the marinade slightly.

    Add the sesame oil, sesame seeds, and a large amount of chopped green onions. If desired, add a splash of acorn syrup.

    To ensure even coverage and keep the eggs submerged, place an unbleached paper towel directly on top of the eggs in the liquid.

    Let the eggs marinate in the refrigerator for at least a couple of hours (or overnight) before serving.

Notes

For a vegetarian alternative to the paper towel trick, some commenters suggest using a cabbage leaf or a sturdy leafy green to keep the eggs submerged. The marinade is excellent served over warm rice.
