Ingredients
- 5 Yukon Gold potatoes (thinly sliced)
- 4 tbsp unsalted butter
- 0.5 onion (small diced)
- 5 cloves garlic (minced)
- 0.25 cup all-purpose flour
- 1 tbsp kosher salt (Ocean salt recommended)
- 12 oz heavy cream
- 12 oz chicken stock
- 1 tsp rosemary (chopped)
- 0.5 tsp ground nutmeg
- 0.5 tsp cayenne pepper
- 0.25 tsp black pepper
- 0.5 cup shredded cheddar cheese
- gruyere cheese (grated, for topping)
- chives (for garnish)
Steps
- 1
Preheat your oven to 375°F (190°C). Thinly slice the Yukon Gold potatoes into uniform rounds.
- 2
In a saucepan over medium heat, melt 4 tablespoons of unsalted butter.
- 3
Add the diced onion to the butter and sauté until translucent. Stir in the minced garlic and cook for another minute until fragrant.
- 4
Whisk in 1/4 cup of all-purpose flour to create a roux. Cook for 1-2 minutes to remove the raw flour taste.
- 5
Slowly pour in the heavy cream and chicken stock while whisking constantly to prevent lumps.
- 6
Season the sauce with kosher salt, chopped rosemary, ground nutmeg, cayenne pepper, and black pepper. Simmer until slightly thickened.
- 7
Remove the sauce from heat and stir in 1/2 cup of shredded cheddar cheese until melted and smooth.
- 8
In a greased baking dish, layer the sliced potatoes. Pour the cheese sauce evenly over the layers, ensuring the sauce gets between the slices.
- 9
Cover the dish with foil and bake for 45-50 minutes, or until the potatoes are tender when pierced with a fork.
- 10
Remove the foil and top the potatoes with a generous layer of grated gruyere cheese.
- 11
Place the dish under the broiler for 2-4 minutes until the cheese is bubbly and golden brown.
- 12
Garnish with fresh chives before serving.
Notes
Yukon Gold potatoes are recommended for the best balance of texture and flavor. While traditional scalloped potatoes don't always use cheese, this version uses both cheddar in the sauce and gruyere for the topping.
