Ingredients
- 1 cup cottage cheese (4% fat recommended)
- 1 cup strawberries (chopped)
- 1.5 cup shredded coconut
- 1 tsp vanilla extract
- 0.25 cup agave or honey
- 1.5 cup chocolate chips
- 1 tbsp coconut oil

In a large bowl, combine the cottage cheese, chopped strawberries, shredded coconut, vanilla extract, and agave (or honey). Stir until well mixed.

Prepare a baking sheet or a chopping board by covering it with a sheet of parchment paper. Ensure the board or sheet is small enough to fit into your freezer.

Using a tablespoon, scoop the mixture onto the parchment-lined sheet to form approximately 10 individual clusters.

Place the baking sheet in the freezer for 2 hours, or until the clusters have set and are completely hardened.

Once the clusters are frozen, add the chocolate chips and coconut oil to a microwave-safe bowl.

Microwave the chocolate mixture in 30-second intervals, stirring thoroughly between each interval, until the chocolate is fully melted and smooth.

Using two forks, dip each frozen cluster into the melted chocolate, flipping to ensure they are fully coated.

Place the chocolate-covered clusters back onto the parchment paper and put them in the fridge for 10-15 minutes to allow the chocolate to set before serving.
Notes
Store the clusters in the refrigerator to maintain their texture.
