  • 1 tbsp dark chocolate (chopped; plus more for topping)
  • 2 tsp dried banana chips (chopped; plus more for topping)
  • flaky sea salt (for finishing, to taste)

Steps

    In a small bowl, whisk together the mashed banana, melted vegan butter, dark brown sugar, granulated sugar, and vanilla extract until the mixture is creamy and well combined.

    Add the flour, cornstarch, baking soda, salt, and cinnamon to the bowl. Mix just until no dry streaks remain; avoid overmixing.

    Fold the chopped dark chocolate and chopped dried banana chips into the dough until evenly distributed.

    Cover the bowl and refrigerate the dough for 20 minutes so it firms up and is easier to shape.
