Ingredients

  • 2 tbsp olive oil (For sautéing)
  • 1 yellow onion (Diced)
  • 2 carrots (Diced)
  • 2 celery stalks (Diced)
  • 3 cloves garlic (Minced)
  • 1.5 lb boneless, skinless chicken breasts (Cut into bite-size pieces)
  • 6 cup chicken broth (Low-sodium preferred)
  • 1 tsp dried Italian seasoning
  • salt (To taste)
  • black pepper (To taste)
  • 16 oz potato gnocchi
  • 1 cup heavy cream (Added near the end of cooking)
  • 3 cup baby spinach (Loosely packed)
  • 2 tbsp fresh parsley (Chopped, for garnish)

Steps

  1. 1

Prepare the vegetables by dicing the onion, carrots, and celery, and mince the garlic. Cut the chicken into bite-size pieces.

  2. 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the onion, carrots, and celery, and sauté for 5 to 7 minutes, until the vegetables begin to soften.

  3. 3

Add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.

  4. 4

Add the chicken pieces to the pot. Season with Italian seasoning, salt, and black pepper. Cook for 4 to 6 minutes, stirring occasionally, until the outside of the chicken is no longer pink.

  5. 5

Pour in the chicken broth and scrape the bottom of the pot to loosen any browned bits. Bring the soup to a gentle boil.

  6. 6

Reduce the heat to medium-low, partially cover the pot, and simmer for 10 to 12 minutes, until the chicken is cooked through and reaches 165°F (74°C) internally.

  7. 7

Add the potato gnocchi and simmer according to the package directions, usually 3 to 5 minutes, until the gnocchi are tender and float to the surface.

  8. 8

Pour in the heavy cream and stir to combine. Warm the soup gently for 2 to 3 minutes; do not boil vigorously after adding the cream.

  9. 9

Add the spinach and stir until wilted, about 1 to 2 minutes. Taste and adjust the salt and pepper.

  10. 10

Ladle the soup into bowls, garnish with chopped parsley, and serve hot.
